Their condition isn't good, but it looks as if they've adjusted to the situation, and that they get the best out of what they've got.

Something like:
Leur condition n'est pas bonne, mais il paraît qu'ils se sont adaptés à la situation, et ils profitent le mieux possible de ce qu'ils ont.
The last bit is a fairly literal translation. You could also do as you have and use some roughly equivalent set expression, e.g. one you'll see used quite often if you Google it:
... et ils font contre mauvaise fortune bon coeur.

P.S. I wonder if for the first part you mean something like "Ils ne vivent pas dans de bonnes conditions" (they aren't living in good conditions)?

Mais en général ils semblent très heureux d'apprendre quelque chose de nouveau
