Les végétariens ne mangeant pas de viande. Mais ils prennent des œufs. C'est les végétaliens qui ne mangeant pas de bœuf.
Ne mangent :) "mangeant" would be a present participle.

I think 2 is correct
Both are corrects!

But the first one is better than the second because you are talking about de l'oeuf.

you have to be careful though with the pronunciation in French because, for the plural the f is not pronounced.
In a negative phrase, in order to know whether you need to use a plural or a singular, just ask yourself the following question: if the phrase wasn't a negative one, how many of them would it be? When in doubt, the plural is usually preferred.

Would a non-vegetarian eat one egg or more?

Probably more. So #2 does apply.
