The trick with these words is that none of them corresponds one-to-one with a single word in English. Any of these words can mean his, her, its, their (e.g. in the sense of "his or her"), one's (and occasionally one or two other meanings-- in particular they can occasionally be used to mean our, though this isn't so common).

In English, the choice between these words depends on the owner. For example, his car implies that the person owning the car is male; her car implies that the owner is female.

But in French, with any of these meanings, the choice between son/sa/ses depends on the thing owned, not on the owner. So sa voiture can mean his car, her car, their car, one's car, our car... but the reason for the choice of the word sa is that voiture is feminine.
