Love letter

I think the above is the German equivalent of the second sentence.

"Nous pouvons être de bons amis".

It might be a bad idea as a part of a love letter.

Maybe this is a cultural thing, but "we can be good friends" is what we would say after we break up. It's a polite way to say "I don't want to see you ever again".
Of course the intent is different in this context, but referring to something we'd say in order to break up would not be wise in a love letter.

Je ne peux pas vivre sans vous.

Use the conditional: Je ne pourrais pas vivre sans vous
(or probably "sans toi"... If you're sending a love letter, you probably know her enough to dare using "tu").

The present would make you sound depressed and desperate, as if you'd kill yourself if she ever replies "no". Don't sound like a wimp, use the conditional.

P.S. Just to add to Frank's excellent answer about the French: I'm not the world's German expert, but I think:

- as with the French, if you're saying this kind of thing to somebody, the likelihood is you'd know them well enough to say ohne dich;
- the word order would be Ohne dich kann ich nicht lieben (German is a so-called "V2 language", in which the verb is generally always the "2nd element" of the sentence)
- I think the same distinction between peux/pourrais that Frank mentioned could apply to German, so in practice it might be könnte ich.
